It's been almost a month since I started staying home with Isaac, I thought I would have so much time to do so many things. Boy was I wrong! I never knew staying home with Isaac would be so exhausting! I knew what mental exhaustion was but now I am everything exhausted! There are muscles in my back that are sore that I didn't even know I had. The second week I was home, I could hardly sleep because my back hurt so bad! I know I need to give us some time to get into a routine and stop being so hard on myself about why I didn't get to everything I wanted to. Have I cooked since I've been home, maybe twice eek! I wanted to cook more....so that is one of my goals this next week...if you have any fast easy recipes you want to share, leave a comment! Isaac usually takes a good nap around 4ish so I should be able to cook some easy meals!
So here is to all my stay at home mommy friends. I admire you more now then when I worked! You have a HARD job and at times a thankless job. Thank all of you for encouraging me! I am starting to get the hang of staying home with I-man! Oh and He's already insanely attached to me, I can't walk out of the room anymore without him freaking out....which is hilarious to me because for the first year of his life he was with Mary!
Way to go Stay at Home Mommies! You are the best!

You said it girl! It is a tough job! but, so rewarding.
this is very much how i felt when i first started staying at home. i am amazed how easily i could deal with 150 teenagers, but 2 under 2 run me absolutely ragged. i am SO tired every night, but i wouldn't trade this hard job for any other one in the world! i'm so proud of and happy for you!

I have a fast, easy recipe. =) It's quick and very filling. I'll just list the ingredients, I just eyeball how much to use.
Chicken & Sausage Casserole
cooked rice
canned chicken breast (undrained)
kielbasa (cut into chunks)
cream of mushroom soup
chicken broth
poultry seasoning
salt and pepper
celery (chopped)
onion (chopped)
a dab of butter
Just saute the celery and onion in the butter in the microwave for a minute or two until soft. Then mix all of the ingredients together in a baking dish (best to use your hands) and cook at 350 degrees until heated through (usually about 30 minutes). Cornbread instead of rice works good too.

I don't have a recipie for you but I can tell you that I speed up the process of cooking by keeping cubed beef and ground beef cooked in the freezer. I will take a Sunday afternoon and free 7 lbs. of beef or so for the week for chilli, stuffed peppers, stew, burritos, etc. Hope that helps! (Wishing I could be home.....)
